Chunky Potato Vegan Cream of Mushroom Soup!

I don't know about you but creamy mushroom and potato soup is my go to when I'm sick or wanting some warm comfort food in the winter.
 
No matter what you are craving or what your favorite comfort food is, there is a healthy way to make it!

Here are a few simple substitutes that I made for this healthy vegan cream of mushroom soup recipe...
  • Instead of white flour ==> oat flour
  • Instead of milk and butter ==> unsweetened coconut milk
  • Instead of chicken broth ==> organic vegetable broth
And I even added some beneficial spices like turmeric and cayenne pepper! Now here's the recipe.

Ingredients:

  • 1/2 yellow onion
  • 1/2 cup of carrots
  • 1/2 cup of green onion
  • 2 cloves are garlic
  • 1/4 cup chopped parsley
  • 1/2 cup oat flour
  • 4 baby bella mushrooms
  • 3 cups of vegetable broth
  • 1 cup coconut milk
  • 3 medium size potatoes
  • turmeric
  • cayenne pepper
  • pink Himalayan sea salt

Instructions:

  1. Chop up potatoes and onions then saute in a pan on medium heat for 10 minutes.
  2. While those are cooking chop up the rest of the vegetables (carrots, green onion, mushrooms, garlic, and parsley.)
  3. Put a large pot on the stove at medium heat. Add coconut milk, vegetable broth, and oat flour to a large pot and cook on medium heat while you whisk until it thickens.
  4. Once it starts to thicken, add all vegetables, seasonings and spices in and cook for 7-10 minutes.
  5. Enjoy your dairy free gluten free gut loving comfort food!
