Oh Pancakes Aren't Part of Your Diet!

Forget that noise! I love pancakes so I eat them. I don't deprive myself from the things I love and you shouldn't either!
The secret to success is finding healthier versions of the things you love. So instead of eating pancake mix from a box that's filled with preservatives and other crappy ingredients, try this delicious and healthy pancake recipe and I promise you'll love it!
Before we get to the recipe I want to spread a little motivation!
I know eating healthy can be frustrating. All these damn diet programs are so hard to stick to because you have to deprive yourself of the foods you enjoy! It just SUCKS, I feel ya girl!
But I figured out that finding healthy versions of your favorite foods is an absolute MUST if you plan to be healthy and reach your goals.
This was a game changer for me because I hated dieting and I was so inconsistent. Being super strict and then binge eating until I made myself sick!

Now let's take a look at that delicious healthy vegan pancake recipe!

  • 1/2 cup organic brown rice flour
  • 1 tbsp chia seeds
  • 1 banana
  • 1/3 cup unsweetened coconut milk
  • 1 tbs banking soda
  • dash of sea salt
  • dash of organic cinnamon
  • 2 tsp coconut sugar
  • 1/2 cup organic strawberries
  • 1/2 cup wild blueberries
  • 1 tbsp maca root powder (optional)
  • drizzle 100% pure maple syrup on top


  1. Make chia egg. (Google how to make)
  2. Mash banana in big bowl.
  3. Add dry ingredients & mix.
  4. Add wet ingredients until batter consistency. (Add more flour or coconut milk as needed)
  5. Let pan heat up on medium for 10 minutes. Spray pan with coconut oil.
  6. Pour batter into pan and cook like regular pancake!
  7. Add fruit and maple syrup on top!
I'm not exaggerating when I say this is probably my favorite healthy swap recipe that I have made to date! YOU HAVE TO TRY IT!
