These Muffins are So Good it's Hard to Believe They're Healthy!

These healthy superfood blueberry muffins are a great snack or meal the whole family with love! Usually muffins are are filled with sugar, gluten, dairy processed ingredients. Not these muffins! They are gluten, dairy, soy, egg, and oil free!

This is a spin off of the Medical Medium's wild blueberry muffin recipe from the Liver Rescue book.

When I first made them, I was so shocked at how insanely tasty and healthy they were. And so easy to make!

Now, I make them constantly. I want to highlight some powerful ingredients that your body is going to adore from these muffins...

Wild blueberries: one of the highest antioxidant containing fruit.

Lemon: lowers anxiety and improves mood, very healing for skin.

Chia seeds: strengthens immune system and helps digestion.

So here's the recipe...

  • 1/4 cup chia seeds
  • 2 cups gf quick oats
  • 2 mashed bananas
  • tsp baking soda
  • tbsp raw organic honey
  • 1 squeezed lemon
  • 1/2-1 cup wild blueberries
  • 1 tbsp coconut sugar
  • 1 tbsp coconut oil melted


  1. Pre-heat oven to 375 degrees.
  2. Blend 2 cups of gf oats and chia seeds to make flour
  3. Mash two bananas into a large bowl and add baking soda, honey, lemon, and melted coconut oil into the bowl.
  4. Add flour until batter consistency.
  5. Pour batter into muffin pan and cook for 15 minutes

Many of the ingredients in these muffins are also VERY beneficial to your gut health! As you know, gut health is very important to me because a gut healthy is a crucial part of weight loss and reducing the annoying belly bloating!

That's why foods like these muffins are so important to eat girl. They taste good and help you lose weight and beat the bloat by improving your gut health! Food is just one piece to the puzzle though.
