Raise Your Hand if You Love Pancakes!!!

Come on...who doesn't love pancakes?! Too bad they're usually packed full of processed ingredients that your body doesn't like very much.

But the good news is, you can make healthy pancakes and they're super easy! Also gluten free, dairy free, and egg free. Trust me...they still taste AMAZING!

If you have been following me for very long at all, you have probably figured out that I am constantly finding or creating healthier versions of the foods I love!

So I'm not stopping now. Remember when you have cravings you don't have to restrict or starve yourself, girl!

Just make some healthy swaps and you're good to go. You can check out all my other healthy Recipes here but let's get to this tasty healthy breakfast recipe that has become one of my new favorites!

Ingredients:

  • 1 smashed banana
  • 1 squeezed lemon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup gluten free oat flour
  • 1 cup blueberries
  • 2 tsp coconut oil
  • 1/4 cup maple syrup

Optional Toppings:

  • maple syrup
  • coconut whip

Instructions:

  • Add all ingredients (except baking powder) into the blender until smooth pancake batter consistency.
  • When done blending mix the baking powder into the batter in a mixing bowl. Add a little more water if needed for desired consistency.
  • Heat a large pan with coconut oil over medium heat.
  • Once pan is hot, pour batter to form pancake. Cook for a couple minutes on each side until they begin to brown.
  • Add toppings as desired.

These whole food pancakes with fresh fruit, are the perfect summer breakfast or any meal really! They contain some awesome gut healing ingredients that help with digestion and weight loss as well.

And since these healthy pancakes are made with gluten free flour and dairy free whip cream so they don't upset your stomach if you're sensitive to those things like I am!
 
You can easily meal prep lots of these to have for breakfast for the next couple days, that way you have no excuse to skip out on a healthy breakfast. Simply heat them up, add your toppings, and they are ready to eat!
