Salads Don't Have to be So Boring!
Salads get a bad rep a lot of times! This is thanks to all those ridiculous "fad diets" that say you can only eat dry chicken breast on a bed of lettuce...that's NOT a salad girl!
I challenge you to be open minded here and try to change your perspective. I always load my salads with tons of DELICIOUS and BENEFICIAL ingredients. So I don't “HAVE” to eat salads - I “GET” to eat them.
I encourage you to start doing the same because your body and mind crave those nutritious leafy greens and superfoods that hold so many vitamins, minerals, and enzymes are bodies and guts thrive off of!
I threw together this quick and easy fall salad recipe that I know you will love! So take a screen shot or Pin it to your favorite Pinterest board so you can grab these ingredients and make it for yourself and/or family one day this week!
This is also a great option for holiday feasts. I plan to take this to my Thanksgiving and Christmas get togethers this year!
10 Minute Healthy Thanksgiving Salad Recipe!

- 1 cup of spinach
- 1 cut of romaine
- 1 pear
- 1/2 cup pecans
- 1 tablespoon coconut oil
- 1-2 tablespoons coconut sugar
- 1/4 cup vegan cheese (miyokos)
- 1/2 tablespoon tahini
- 1 tablespoon 100% pure maple syrup
- Sprinkle of cayenne pepper and pink Himalayan sea salt
- Preheat oven to 350 degrees.
- Mix pecans, melted coconut oil, and coconut sugar all together.
- Spread out on large baking sheet and bake for 10 minutes. (These by themselves can be a great holiday healthy treat!)
- Chop up leafy greens, pear, and cheese in a large bowl.
- Add pecans and salad ingredients together.
- For the dressing, mix tahini, maple syrup, cayenne, and salt together then add water until you get the dressing consistency you like!
- Mix all together and you have a delicious nourishing fall meal!
