Healthy Snack Idea for Fall!

I don't know about you, but fall is full force in our home! My husband and I are making chili, pumpkin spiced lattes, and a LOT of muffins!
 
Muffins are known as a sugary carb loaded treat, but I've turned these ones into a nourishing breakfast or snack! They are loaded with whole food goodness such as bananas, pumpkin puree, and oats.
 
Once of the most frequently asked questions I get is "what do you substitute for flour, sugar, and eggs while baking?" This is such a great question! You can bake and use nourishing ingredients in replacement of these ones.
 
Instead of processed white flour, I simple blend quick oats in my Ninja blender to make oat flour.
 
Instead of eggs, I used a smashed banana.
 
Instead of white sugar, I use coconut sugar and raw organic honey or 100% pure maple syrup.
 
Easy swaps that will make baking a whole lot healthier! Now, let's dive into this fall recipe!

INGREDIENTS

- 1 smashed banana
- 1 chopped apple
- 1 1/2 cup oat flour
- 2 tbsp raw organic honey or 100% pure maple syrup
- 1/2 cup pumpkin purée
- 1/2 cup coconut sugar
- 1 tsp baking soda
- dash of salt
- cinnamon or pumpkin pie spice

 INSTRUCTIONS:

- Mix all wet ingredients together (smashed banana, honey, pumpkin purée, chopped apple).
- Mix I’m dry ingredients until batter consistency (mix in a tiny bit of nut milk or water if you need)
- Put in muffin pan and bake in oven on 375 for 15 minutes!
 
I highly recommend enjoying these warm muffins with Miyokos delicious vegan butter!
