1 1/2 cups of oat flour
1 tsp baking soda
1 cup of Miyokos vegan butter
1 1/4 cup coconut sugar
2 chia or flax eggs
2-3 cups rolled oats
1 cup dairy free chocolate chips
1/2 - 1 cup organic canned pumpkin
Pumpkin pie spice
Preheat oven to 375 degrees.
Make chia or flax egg. 1 tbsp chia seeds with 3 tbsp water (make 2) and let sit for a couple of minutes. You can search this on YouTube if you've never done this before.
Mix all dry ingredients in a large bowl.
Soften the butter in the microwave for 15 seconds then mix in the dry ingredients.
Add the chia egg and canned pumpkin.
If the batter is still too dry, add small amounts of nut or oat milk until you get a good cookie dough consistency.
Bake for about 20 minutes or until they start to brown on top.
- Let cool and enjoy!
That's all my friend! As usual, these are super easy to bake. Because I am definitely no all star in the kitchen so I keep things simple!

Remember, you don't have to be on some restrictive fad diet to see results! In fact I strongly DISCOURAGE that to all the women I talk to when discussing their weight loss and fitness goals. There's a better way!
