Chocolate and Pumpkin....Possibly My 2 Favorite Things in One!

It's fall y'all and you know what that means....PUMPKIN EVERYTHING!!! And why not through some chocolate in there too right?
 
I love making snacks and treats that I don't have to feel bad about eating. And these healthy dessert recipes are perfect for my clients too because they help to keep them on track without feeling restricted to a diet!
 
So for this tasty healthy pumpkin chocolate chip cookie recipe, I substituted all the crappy processed ingredients for whole food ingredients that are beneficial. They also won't make you feel bloated or mess up your weight loss goals!
 
If you want long lasting results you have to enjoy what you're eating so that's always the goal for me! If you like the sounds of getting rid of the diets forever then stick around girlfriend!
 
Now let's get to that healthy chocolate chip cookie with pumpkin recipe! And they're also gluten free and dairy free just like all of my other recipes!

Ingredients

  • 1 1/2 cups of oat flour
  • 1 tsp baking soda
  • 1 cup of Miyokos vegan butter
  • 1 1/4 cup coconut sugar
  • 2 chia or flax eggs
  • 2-3 cups rolled oats
  • 1 cup dairy free chocolate chips
  • 1/2 - 1 cup organic canned pumpkin
  • Pumpkin pie spice
  • Salt
  • Cinnamon

Instructions

  1. Preheat oven to 375 degrees.
  2. Make chia or flax egg. 1 tbsp chia seeds with 3 tbsp water (make 2) and let sit for a couple of minutes. You can search this on YouTube if you've never done this before.
  3. Mix all dry ingredients in a large bowl.
  4. Soften the butter in the microwave for 15 seconds then mix in the dry ingredients.
  5. Add the chia egg and canned pumpkin.
  6. If the batter is still too dry, add small amounts of nut or oat milk until you get a good cookie dough consistency.
  7. Bake for about 20 minutes or until they start to brown on top.
  8. Let cool and enjoy!
That's all my friend! As usual, these are super easy to bake. Because I am definitely no all star in the kitchen so I keep things simple!
 
It just goes to show you that with some basic cooking/baking skills you can create delicious whole food meals and desserts that align with your health and fitness goals!
 
Remember, you don't have to be on some restrictive fad diet to see results! In fact I strongly DISCOURAGE that to all the women I talk to when discussing their weight loss and fitness goals. There's a better way!
