There is a funny story which led to me making banana bread almost every other day this week. In the process, I ended up perfecting the recipe and want to share it with you!
Since being later in my pregnancy, I have been doing online pick up orders at the grocery store. I thought I added 24 single bananas to my order but instead got 24 BUNCHES of bananas! Needless to say, I needed to do something with all of them! A healthy banana bread was the perfect solution!
This healthy dessert recipe is delicious, made with holistic ingredients, gluten free, and dairy free. Oh and it's super easy to make so you have to try it!
Here is what you will need for the recipe.
Step 1: Preheat the oven to 325 degrees. Use a little bit of coconut oil to grease a 9X5 loaf pan.
Step 2: In a large mixing bowl, whisk all the wet ingredients together. These include coconut oil (melted), honey, mashed bananas, eggs, and milk.
Step 3: Now add the baking soda, cinnamon, and coconut sugar and whisk together. Pour in the flour until batter is consistent. Then pour into a loaf pan.
Step 4: Lightly add thin slices of banana on top along with some more chopped walnuts and sprinkle some coconut sugar.
Step 5: Bake for 1 hour then let cool. Enjoy!
This recipe goes perfect with a side of dairy free vanilla ice cream! Take this to an event or holiday and everyone will love it. This recipe is also great if you are trying to stay clear or dairy, gluten, and refined sugar to improve your gut and digestion.
