Healthy Falafel Recipe!
These chick pea falafels are so easy to make and bursting with flavor from fresh herbs and nourishing ingredients! You can make a ton of these at once (this recipe makes about 24) and keep them in the fridge to throw on top of a salad, roasted veggies, or have them by themselves in a great dipping sauce!
They make for a great appetizer or a healthy plant based protein source for dinner. So check it out...

Chop up onion, spinach, mushrooms, and parsley into small pieces and put into a mixing bowl.
Put the entire can of chick peas, lemon juice, and tahini in the blender and blend until smooth and pour into mixing bowl.
Add the flour, seasonings, and baking soda into the mixing bowl and mix together.
Put a pan on medium heat and add the coconut oil.
Roll mixture into small patty shapes and put into the pan.
Cook for about 7 minutes on each side, let cool and enjoy in a salad or along side some veggies!
